The hotel group Caldera Group, based in Chania, is looking for an experienced and creative Chef with at least 10 years of professional experience to lead the kitchen and offer unique culinary experiences in hotels. Main responsibilities: Menu development and design: creation of seasonal menus for buffet and à la carte restaurants. Development of innovative recipes that reflect the hotel's identity and Mediterranean traditions. Accurate menu costing to ensure profitability and maintain consistent quality across all dishes. Kitchen Management: leading and supervising the kitchen team including Sous Chefs, Chef de Partie and support staff. Staff training in cooking techniques, recipes and safety protocols. Planning and scheduling for smooth operations during peak hours.Food preparation and preparation: overseeing dish preparation to ensure quality, presentation and proper portioning.Inventory and cost management: tracking inventory, ordering materials and ensuring the kitchen is operating cost-effectively. Reducing waste and optimizing resources. Compliance with health regulations: ensuring compliance with all ISO 22000 standards and food safety regulations.
